Organic African Red Rooibos of the highest quality is a wonderful alternative to black and green tea. Naturally non-caffeinated and full of energy-giving B vitamins and minerals, this tea is noted for its' strong body and delicious smooth and nutty undertones.

Brewing Tips: Pour boiling water over leaves and steep for 3 - 5 minutes.

Green – Pu Ehr

This is a wonderful organic Pu Erh tea harvested from the wild, mountainous tea plants from the southwest of China. The wild leaf tends to be bigger and tougher than its cultivated cousin and has a more earthy flavor due to a slightly different chemical content. Pu Erh tea is also processed differently; the better ones allowed to age and oxidize much like an old red wine.

Recommendations: Although considered a green tea, it has the deep color and oxidized, slightly fermented taste of a black or 'red' tea. This is highly complex tea that strikes the palate with a robust, strong earthiness and finishes with a delightful nutty flavor. Highly aromatic and robust.

Pai Mudan White Tea

This organic White Peony is of the highest grade and comes hand picked and dried directly from one of the world's few organic growers. Harvested during the driest season, this mellow, slightly woodsy tea includes both new leaf and the center needle sprout.

Brewing Tips: Let boiling water cool at least one minute before pouring gently over tea leaves. Extremely light weight and tender, use a well rounded tablespoon per cup and steep 4-5 minutes.

Formosa Oolong

Oolong are teas that are allowed to oxidize more than a green tea but less than a black. The long twisted leaves, a mixture of brown, black and red with bits of green and silver, turn a rich copper color as they steep. This organic Formosa Oolong falls between the luxuriant, highly complex (and expensive) Oolongs and the broth-like Oolongs served at Chinese restaurants. It is full bodied and well balanced, neither overly vegetal or floral and makes a strong, dark and satisfying brew.

Brewing Tips: The water should be 30 or 45 seconds just under a boil. A little Oolong goes a long way and is good for several infusions. Steep 2 to 4 minutes, longer for additional steeps.
